CHERRY CHEESE MOLD

1 (8 oz.) can pitted dark sweet cherries
1 (3 oz.) package Jell-O Cherry Flavor Gelatin
2 teaspoons lemon juice
1 1/2 cups crushed ice
2 packages (3 oz. each) cream cheese, softened

Drain cherries, reserving syrup. Add water to syrup to make 3/4 cup and bring to a boil.

Combine gelatin, boiling liquid and lemon juice in electric blender container. Cover and blend at low speed until gelatin is dissolved, about 1 minute. Add ice and cream cheese; cover and blend until ice is melted and cheese is well blended, about 1 minute.

Pour into a 4-cup mold or bowl. Drop in cherries, one at a time. Chill until firm, about 1 hour.

Unmold.

Makes 4 cups or 8 servings
