I am look for a cutout cookie my mother used to make. You used a round frilly edged cookie cutter for the bottom and the same cutout for the top and then used a small shaped cutter to cut out the center of the top cookie. She spread jam on the bottom cookie and top it with the cookie with the center cutout cookie. She would also sift powdered sugar over the top cookie before she layed it on top. The cookie had no nuts, nutmeg, cin, or any of these type spices. It was a light shortbread type cookie. It looked much like a Linzer Torte cookie. Pepperidge Farm has a cookie called "Chantilly" that looks like what I'm looking for only my mothers didn't have a latticed center. I would appreciate any feed back from anyone.
