FRIED EGGPLANT WITH CATSUP SAUCE

2 tablespoons butter
3 tablespoons flour
1 1/4 cups milk
1/4 cup catsup
1/4 teaspoon onion juice
Salt and pepper
6 slices fried eggplant

Melt the butter in a double boiler, add the flour and mix well. Add the milk gradually and cook, stirring constantly until thickened.

Add the catsup and onion juice and season with salt and pepper- Reheat and serve on the eggplant.
