BRUSSELS SPROUTS AU GRATIN

1 quart Brussels sprouts
2 tablespoons butter
3 1/2 tablespoons flour
1 cup milk
1/2 teaspoon salt
Few grains pepper
1 cup grated American cheese, divided use
Buttered soft bread crumbs

Cook the Brussels sprouts in boiling salted water until tender. Drain, cut in halves and place in a buttered baking dish.

Melt the butter in a double boiler; add the flour and mix well. Add the milk gradually and cook, stirring constantly until thickened.

Add salt, pepper and 1/2 cup of the cheese and stir until the cheese is melted. Pour over the Brussels sprouts and cover with the crumbs mixed with the remaining 1/2 cup of cheese.

Bake in a moderate oven (350 degrees F) until the crumbs are brown and the mixture is heated through.
