MUSHROOM SAUCE1/2 cup chopped onion 1/4 cup chopped celery 1/2 cup sliced mushrooms, fresh or canned 1/4 cup olive or salad oil 1 (6 oz.) can Hunt’s Tomato Paste 2 cups hot water 2 tablespoon chopped parsley 1 tablespoon salt 1/2 tablespoon oregano Dash of ground black pepper 1 bay leaf 1/2 lb. spaghetti, cooked and drained Grated Parmesan cheese (optional, for serving) Cook onion, celery and mushrooms in oil until lightly browned. Mix Hunt’s Tomato Paste, water and seasonings. Add to vegetables. Simmer 30 to 40 minutes. Remove bay leaf. Serve over hot spaghetti, noodles, rice, ravioli or cornmeal mush (polenta). Sprinkle with cheese if desired. VARIATION:TUNA SAUCE: Omit mushrooms. Substitute 1/4 teaspoon basil for bay leaf. Add 1 (7 oz.) can drained, flaked tuna to finished sauce and cook additional 5 minutes.
