BROCCOLI OR CAULIFLOWER CASSEROLE
2 pkgs. (10 oz. each) chopped broccoli (or one 20 oz. pkg. cauliflower) 1 (10 3/4 oz.) can condensed cream of celery soup 1 stick (1/2 cup) margarine (save 2 tablespoons) 2 eggs, beaten 1 cup mayonnaise 1 cup grated cheddar cheese 1 tablespoon grated onion (or 1 tbsp. onion flakes, wet) 1/2 sleeve Ritz crackers, crushed (for the topping)
Cook vegetables according to package directions and drain.
Mix everything together but 2 tablespoons margarine and crackers; put in buttered 2-quart glass casserole.
Mix together the crushed crackers and remaining 2 tablespoons margarine; sprinkle on top of vegetables.
Bake 1 hour at 350 degrees F.
