BAKED CUSTARD2 eggs, slightly beaten
1 cup evaporated milk
2/3 cup water
1/4 cup sugar
1 teaspoon vanilla
few grains salt
Preheat oven to 350 degrees F (moderate).
Mix all ingredients together in a 1-quart bowl. Pour into 4 custard cups. Set cups in a shallow pan holding 1 inch of hot water.
Bake 45 minutes, or until knife inserted near edge of custard comes out clean. Cool.
VARIATION:BAKED CUSTARD WITH BUTTERSCOTCH SAUCE: Divide 4 tablespoons Brown Sugar among the 4 custard cups. Press sugar lightly on bottom. Pour custard mixture carefully over brown sugar. Bake as directed above. Cool. Loosen edges with knife. Unmold.
