EASY COCONUT CREAM PIE

1 (8-inch) baked pastry crust
2 eggs, separated
1 (4-serving size) package cook-and-serve vanilla pudding mix
1/2 cup cut-up coconut
1 cup evaporated milk
3/4 cup water
1/4 cup sugar

Put slightly beaten egg yolks, pudding mix, and coconut in a 2-quart saucepan.

Combine evaporated milk and 3/4 cup water; gradually stir into pudding mixture. Cook and stir until mixture bubbles all over top and is thick, about 5 minutes. Pour into crust.

Beat 2 egg whites until soft peaks form. Gradually beat in sugar, beating until stiff. Spread over filling.

Bake in a 350 degree F oven (moderate) for 12-15 minutes, or until golden brown. Chill and serve.

Makes 1 (8-inch) pie
