HEAVENLY FRUIT DESSERT1 (1 lb. 1 oz.) can fruit cocktail, packed in syrup, drained, reserve syrup
2 cups miniature marshmallows
1/2 cup cut-up. drained maraschino cherries
2/3 cup evaporated milk
1/4 cup sugar
2 tablespoons lemon juice
1/2 cup broken pecans
1/3 cup coconut
In a 2 1/2-quart bowl mix together marshmallows and cherries. Stir in the drained fruit and 1/4 cup of the reserved syrup. Chill at least 1 hour.
Chill evaporated milk in an ice tray until almost frozen at edges.
Put ice-cold milk into cold small bowl of electric mixer (or 1 1/2·quart bowl). Add sugar. Using cold beaters, whip with electric mixer at high speed or with rotary beater until fluffy. Add lemon juice and beat until stiff. Fold into fruit mixture. Spoon into 6 dessert dishes. Mixture will keep 45 minutes in refrigerator.
Just before serving, top with pecans and coconut.
