RICE PUDDING2 eggs, slightly beaten
2 cups cooked rice
1 cup evaporated milk
1/2 cup sugar
1/2 cup raisins or cut-up dates
1/2 cup water
1 1/2 teaspoons vanilla
1/4 teaspoon salt
1/4 teaspoon ground cinnamon or nutmeg
Preheat oven to 350 degrees F (moderate).
Mix all ingredients together in a 2·quart bowl. Pour mixture into a greased 1 1/2-quart baking dish. Set dish in a shallow pan holding 1 inch of hot water.
Bake 45 minutes, or until pudding is firm at edges. Serve warm or cold.
VARIATION:BREAD PUDDING:Use 2 cups cut-up dry cread (about 4 slices cut into 1/2-inch cubes) in place of rice. Increase evaporated Milk to 1 1/2 cups. Bake as directed.
