BEEF AND POTATO BAKE1 lb. ground lean beef
1 cup evaporated milk
1/2 cup fine dry bread crumbs
1/2 cup (1 envelope) dried onion soup mix, divided use*
1 teaspoon salt, divided use
4 cups thinly sliced, peeled raw potatoes
1 teaspoon dried parsley flakes
1/4 lb. grated Process American Cheese (1 cup)
Preheat oven to 350 degrees F (moderate).
Place beef, evaporated milk, bread crumbs, 1/4 cup of the dry onion soup mix and 1/2 teaspoon salt in a 1 1/2-quart bowl and mix together well. Spread evenly in a shallow 2-quart baking dish.
Combine, potatoes, remaining 1/4 cup dry onion soup mix, parsley flakes and remaining 1/2 teaspoon salt. Arrange evenly over meat mixture in dish.
Cover and bake 45 minutes. Sprinkle cheese over potatoes. Bake, uncovered, 15 minutes more, or until potatoes are tender.
*Stir dried onion soup well before measuring.
