EASY CHEESE SAUCE2/3 cup evaporated milk
1/4 lb. process American cheese, cut into small pieces (about 3/4 cup)
Put evaporated milk and cheese in a 1-quart saucepan. Stir over low heat until cheese melts.
Serve over baked potatoes, broccoli, green beans, cauliflower or peas.
VARIATIONS:When melting cheese, add either 1 tablespoon dried minced onion and 1 tablespoon finely cut pimiento, or 1/3 cup drained, cut-up mushroom stems and pieces (2 oz. can.)
Makes about 1 cup
