Recipe: Hungarian Goulash (Better Homes and Gardens, 1960's - 70's)

Main Dishes - Beef and Other Meats
HUNGARIAN GOULASH

2 pounds beef or veal round steak, cut in 1/2-inch cubes
1/4 cup shortening.
1 cup chopped onion
1 clove garlic, minced
1/4 cup all-purpose flour
1 tablespoon paprika
1 teaspoon salt
1/4 teaspoon ground black pepper
1/4 teaspoon dried thyme, crushed
2 bay leaves.
1 (28 ounce) can tomatoes
1 cup dairy sour cream
Hot buttered noodles (for serving)

In large skillet, steak in hot shortening.

Reduce heat; add onion and garlic. Cook till onion is tender but not brown.

Blend in flour, paprika, salt, pepper, dried thyme, and 2 bay leaves. Add tomatoes. Cover and simmer, stirring occasionally, till meat Is tender, 1 to 1 1/2 hours. Stir often toward end of cooking.

Stir in sour cream. Serve at once over hot buttered noodles.

Makes 8 servings

Dear Marilyn,

I have 1930, 1950, 1977 and 1981 editions of the Better Homes and Gardens Cookbook, but I didn't find a Hungarian Goulash recipe in any of them. I did find the above recipe in a booklet that I've had since the 70's which is a sampler of recipes from the cookbook: All-Time Favorites: 70 Years of Best-Loved Recipes from America's Best-Selling Cookbook (Better Homes and Gardens). I hope it's the recipe you're looking for.
