Recipe: Porcupine Meatballs (Better Homes and Gardens, 1970's)

PORCUPINE MEATBALLS

"Plan your next oven meal around Oven Swiss Steak, potatoes, frozen peas, and a hearty fruit cobbler bake along with the meat. Give the tossed salad a new twist with orange and avocado."

1 pound ground beef
1/4 cup uncooked long-grain rice
1 slightly beaten egg
1 tablespoon snipped fresh parsley
2 tablespoons finely chopped onion
1/2 teaspoon salt
1 (10 3/4 ounce) can condensed cream of tomato soup
1/2 cup water
1 teaspoon Worcestershire sauce

Combine meat, rice, egg, parsley, onion, salt, dash pepper, and 1/4 cup (undiluted) tomato soup. Mix well; shape in 20 small balls and place in skillet.

Mix remaining (undiluted) soup, water, and Worcestershire; pour over meatbalis. Bring to boil; reduce heat; cover and simmer 40 minutes, stirring often.

Makes 4-5 servings
