I have an abundance of cucumbers this year. I still have a lot of pickles from last years bountiful crop, and a limited number of jars, so once the pickles are made, I need something else to do with them. We got a dehydrator last Christmas, and am wondering if they can be successfully dehydrated for snacks. There is a very brief note on dehydrating cucumbers in Mary Bell's Complete Dehydrator Cookbook, but no drying times, temps. etc are given. She notes cucumbers are 95% water, so I would assume it would be quite a long drying time, but I have learned the old saying "Never assume, because it makes an a_ s out of you and me!" quite often comes true when I do assume.

I am also going to make a couple pails of "Pickles in a bucket", but other than that, I am at a loss.

If any one has any suggestions at all re: dehydrating or other uses of the cucumbers, please let me know. Any and all suggestions are more than welcome.
