Page, Mint is very good in a lot of food dishes especially peas. There are
many varieties of mints but peppermint is the most common one used in most recipes. The leaves are the part that you use and you can use them either fresh or dried. I add 1/2 teaspoon dried (crumbled, not powdered or ground) mint or 1 1/2 teaspoons fresh mint (snipped) to most pea dish recipes that I make. Here is my favorite recipe:
Mint-Liscious Peas
16 oz pkg. frozen peas
3 tablespoons thin sliced or diced sweet red peppers. Sweet pickle variety extremely good (optional)
1/2 teaspoon dried or 1 1/2 teaspoon fresh peppermint
1/4 teaspoon onion granules
1/8 teaspoon garlic granules
1 tablespoon butter or margarine
3 tablespoons chicken broth
pinch Hungarian Paprika
Add sweet peppers to peas and prepare per package directions. When peas are cooked, add remaining ingredients. Stir well and return to heat until butter/margarine is melted. Serve immediately. Yield: 4 Servings
