Do as the chinese do. Stir fry them with garlic and ginger. Very simple. They are delicious as a substitute for any chinese green there is.When they are in the oriental markets I buy a big bag and stir fry like crazy. But I also parboil them and then freeze them for later use too.
But the best is the simplest. Garlic and ginger. That is it. I had them like that in a great restaurant in Brooklyn that my family used to frequent. When they had the pea shoots they used to replace the spinach with them. Really delicious.
