Hi, the Ball Blue Book, Guide to Home Canning, Freezing & Dehydration, has several different recipes using green tomatoes. You might be able to find this book at your local public library. It might also be available from Amazon Books, a site linked to TKL.


I have never liked mincemeat pies until my neighbor gave me this recipe. Her recipe has become one of my favorite holiday treats.

DOLA'S GREEN TOMATO MINCEMEAT
1 peck green tomatoes, chopped fine (can grind with a food grinder) and placed in large glass, plastic, or stainless steel container. As juice collects, drain it off (it is bitter) and measure the amount. You should get about 7 cups of drained off juice. Discard the juice and replace with equal amount of water.

Put the chopped tomato and water mixture into a large cooking pot and add the following ingredients:
5 pounds sugar (10 cups)
2 pounds seedless raisins
2 quarts chopped apples
2 tablespoons cinnamon
1 tablespoon ground cloves
1 tablespoon allspice
1 tablespoon nutmeg
Boil all ingredients until tender, then add 1 cup vinegar. Boil again for 30 minutes, stirring often, so it will not stick. Put into sterilized quart jars, seal with new lids and jar rings and process in a canner (hot water bath) for 20 minutes. Makes about 10 to 12 quarts.
