Thanks for responding! Yes, this is what I had in mind (good so I'm not crazy). I was even tempted to go ahead and try and adapt my lasagne recipe, but my problem was that I knew very little about eggplant and didn't know if the time and temp should be adjusted. I had to ask a gentleman in the grocery store how to select a 'ripe' eggplant as my mother never served such exotic vegetables. And at the time I can't say as a child that I would have tried them at all. She had enought rouble trying to get me to eat peas-which I still can't stand. But as an adult I have come to appreciate the 'exotic' vegetables. So I would be safe then in just following my own recipe with the eggplant substitution, time and temp? Thanks again!
