Yes, I basically use the same recipe only use the eggplant for the noodles. Sometimes I peel the eggplant and sometimes I don't. Have also used zucchini cut lengthwise in place of noodles. Reminds me of the time my younger son asked if we were too poor to buy noodles when all I was doing was pushing more veggies and getting rid of our big supply. I don't recall why you wanted not to use noodles, but if health reasons, you might want to consider using part gound chicken or turkey and even buffalo or other ground meats to lessen the fat. And of course reduced fat cheeses, etc. But be aware if you use many lesser fat products, you will lose some taste so use spices and herbs to adjust the taste. Aslo reduced cheeses contain more water and the end product may be more watery so you could thicken the tomato sauce some. Now have I really confused you? Nope not.
