Hi! Here is another one, similar, yet different. You could try each for a batch and see which you like best. Both from same book. ZUCCHINI RELISH #2 10 cups ground zucchini (seeded first) 2 cups ground onion 5 tsp. salt 2 1/4 cups vinegar 4 cups sugar 1 tsp. dry mustard 2 tsp. celery seed 1 Tbsp. nutmeg 2 tsp. tumeric 2 Tbsp. cornstarch
Mix onion and zucchini; sprinkle with salt. Let stand overnight. Drain and rinse well. Add remaining ingredients and bring to a rolling boil. Cook for 5 minutes. Makes approx. 4 quarts. Seal in hot sterilized jars.
