This is not really a "recipe" as I do not measure or list ingredients. I grew a lot of cucumbers a few years ago and in desperation (the neighbors were even tired of them!) I started trying to find some good recipes for them. Basically I only had them as fresh snacks, or in salads. I was really surprised to find you can cook them in the exact same way as summer or crookneck squash! I have cooked it quite a few times, and my family loves it! Truth be told, if they don't have really big seeds, you can't tell the difference. I am going to slice some up, dehydrate them, and try sauteeing them with onions and bacon to see if they rehydrate well. I'm finding out if I let them sit in water for an hour or so before I start cooking they rehydrate well! I've also found some recipes online for cucumber casserole- but haven't tried it yet. Seems in other countries they use cucumbers in all kinds of dishes!
