Sorry it took so long for me to respond, have been away. Here's my favorite meatloaf (but I like them all!) which is adapted to family size from a restauranteur friend who makes this in bulk for the most incredible warm meatloaf sandwiches. But it also makes a great loaf for dinner with mashed potatoes. The proportions seem a little strange because I had to cut it down from a huge recipe, but this works!

1 1/4 pounds ground beef (or part turkey or part pork)
1/4 of a large yellow onion
1 stalk celery
1 ounce mushrooms
1/2 average sized (6" or so) zucchini
1 1/2 slices bread, cubed
1/4 cup white wine
1/4 cube margarine
3/4 tsp pepper
3/4 tsp garlic powder
3/4 tsp seasoned salt
1/2 tsp salt
1 egg

Mince vegetables and saute in margarine 5 minutes. Add wine and simmer gently 10 minutes. Add to remaining ingredients and mix well. Shape into a loaf or pack into a loaf pan. Bake at 375 about 1 hour (DON'T overbake, especially if using ground turkey, which because it is lean also can be quite dry).

To make in pressure cooker, shape into a loaf. If your mixture happens to be extra soft, it may help to chill it in the freezer 20-30 minutes after shaping. Then brown the loaf in the pressure cooker on one side in a little oil. Carefully turn over, add 1 cup liquid (beef broth, water, or either of those mixed with a little wine). Bring to pressure and cook 20 minutes, then let pressure drop naturally.
