I think there are a lot of good pans on the market. I agree about All- Clad and would also like to recommend Cuisinart. For me, the most important things to look for would be a stainless steel interior and an inner core of either copper or aluminum. As for the outside of the pan, Stainless is great, but costly, and the anodized finishes have not lasted well for me. I guess that leaves aluminum. You may be able to find a store brand, or a little known manufacture who has equal quality at a good price.
I am absolutely fed up with non stick coatings. They never seem to last, possibly because I can't get my family to treat them right Stainless steel interiors, sprayed with Pam seem to work just as well, and if necessary I can scrub them and not have to throw the pan away.
