Lee, puddings steam nicely in a pressure cooker, once you find a heatproof dish or mold that will fit inside your cooker. I use souffle dishes and various round stainless steel bowls, and sometimes individual ramekins which I stack on top of each other or do in batches. Put the dish on a trivet and cover the pudding with foil. Steam away. I find bread type puddings are done after about 15 minutes at pressure. Custards in about 5.
