I bought a Popeil pasta maker at a second hand store (complete with 20 or so dies) and all the paraphanalia....including a video. The video was helpful with technique, but it only gave one recipe, and I can't seem to get it to work very well. The pasta comes out of the machine looking fine, but when cooked, it goes very mushy. Are there tricks to making pasta that I'm missing? Does anyone have a suggestion about a book that would help me learn how to make better pasta? Or a foolproof recipe? I tried using semolina as the video suggested and results were even worse!
