This is for a Bundt pan, but you probably just need to adjust the baking time.
Carrot Cake Surprise
Cream Cheese Mixture: 1 (8 oz.) pkg. cream cheese, softened 1 c. sugar 1 egg, beaten
Cake: 2 c. flour 1 1/2 c. sugar 2 tsp. baking soda 2 tsp. cinnamon 1 tsp. salt 1 c. oil 3 eggs, beaten 3 c. shredded carrots 1 1/2 c. chopped nuts powdered sugar to top cake or use favorite frosting
Preheat oven to 350 degrees. Cream Cheese Mixture: Combine cream cheese, sugar and egg, mix until well blended. Set aside.
To Make Cake: Combine dry ingredients. Add combined oil and eggs, mixing just until moistened. Fold in carrots and nuts. Reserve 2 cups batter. Pour remaining batter into greased and floured 9-inch Bundt pan. Pour reserved cream cheese mixture over batter, carefully spoon reserved cake batter over cream cheese mixture spreading to cover. Bake 55 minutes or until wooden pick inserted inside comes out clean. Cool 10 minutes. Remove from pan. Cool well. Use powdered sugar as frosting.
