ELECTRIC SKILLET SWEET POTATO FRITTERS

1/4 cup vegetable oil
4 tsp. melted butter
2 cups mashed sweet potatoes
1 cup sugar
1 cup milk
2 eggs, separated
1/2 cup flour
1 tsp. baking powder
1 tsp. cayenne pepper
1/2 tsp. salt

Add 1/4 cup vegetable oil to skillet and heat at 350 degrees F.

Combine melted butter with potatoes, sugar, and milk and egg yolks; set aside.

Sift flour, measure and sift with baking powder, cayenne pepper and salt. Add to the first mixture.

Beat egg whites until stiff peaks form; fold into the batter.

Drop by tsp. into oil. Fry in batches until browned; remove with slotted spoon to paper towels to drain.
