ELECTRIC SKILLET ONION RINGS

2 medium onions, cut into 1/4-inch thick slices separated into rings
1/2 cup all-purpose flour
1/2 tsp. baking powder
1/4 tsp. parsley
1/4 tsp. salt
dash pepper
1 beaten egg
1/3 cup milk

Add 1 quart vegetable oil to skillet. Preheat at 400 degrees F until light goes out.

Make batter by adding flour, baking powder, parsley, salt, and pepper to mixing bowl. Stir in egg and milk.

Toss onion rings in batter. Add about 15-20 rings to hot oil. Turn after 1 minute. Repeat with remaining rings.
