According to a Welbilt bread machine manual, here is are the possible problems and solutions:
PROBLEM: Bread rises too much or collapses:
POSSIBLE CAUSES: Is it very hot or humid?
Are you using anything other than active dry yeast?
FIXES: - Reduce yeast by 1/4 to 1/2 tsp.
- Reduce water by 3 tbsp. Add reduced amount of water back if after kneading three minutes dough appears too dry, adding it 1 tbsp. at a time, up to 3 tbsp.
- Do not use rapid rise yeast.
The humidity factor could be why you're getting good results some days and not others. If you get the dough too wet when adding water back in you can add flour a tsp. at a time to get it back to the right consistency. I hope that's a help!
