SWEET PORTUGUESE WHEAT BREADMake a 1-pound loaf (12 servings)
"This bread can be baked in the breadmaker, but is prettier if the dough is removed from the machine after it has risen and baked in a round cake pan."
1 1/4 cups whole wheat flour
1 1/4 cups bread flour
1 tablespoon dry milk
1 teaspoon sea salt
7/8 cup water
3 tablespoons canola, safflower or sunflower oil
3 tablespoons honey
1 package active dry yeast
1 large egg, beaten
2 tablespoons date sugar (or substitute granulated sugar)
Fit the kneading blade on shaft in bread pan. Carefully measure flours, dry milk, and salt and transfer to pan. Add water, oil, honey and yeast. Place bread pan inside the machine and close lid.
Program breadmaker for whole wheat dough mode.
At end of rising cycle, turn dough out onto a floured board. Lightly oil a 9-inch round cake pan. With floured hands, form dough into a large ball. Flatten ball slightly and transfer to prepared pan. Cover and let rise for 30 minutes.
With sharp knife, cut deep "X" in top of dough. Lightly brush top with beaten egg and sprinkle liberally with date sugar.
Bake bread in preheated 450-degree oven for 10 minutes. Reduce temperature to 350 degrees and bake for 35 to 40 minutes, until bread is golden brown.
Transfer to a wire rack and allow to cool before slicing or wrapping for storage.
