Here's the recipe that I've used so much and that everyone wants:
Linda's Molded Peach Salad
1 large can peaches 1 large block (8 oz) cream cheese 1 large (or two small) boxes of peach jello (I've also used orange and apricot) 1 small container Cool Whip (4 oz.)
Directions:
Drain juice from peaches and add enough water to equal 2 cups liquid.
Bring to boil in microwave or in saucepan. Place jello in blender, and add boiling juice and blend until dissolved. Add cream cheese, blend. Add Cool Whip, blend. Add peaches last - using pulse button blend, leaving peaches in small to medium chunks (your preference how big the chunks are)
Pour mixture into a mold (Tupperware with removable center for easy unmolding is best - I spray a very light coating of Pam on the mold before pouring it in) and chill until firm.
I make this the day before I want it. Then unmold just before serving onto pretty glass plate with silver serving spoon. Or I've served wedges of it directly onto a flat glass salad plate on top of a lettuce leaf.
It's so very easy, and delicious. This is also very good with ham at Easter.
