I freeze the dough all the time. I roll out the rolls, put them on a pan, and when they are frozen, I put them in a zip lock bag.
I have also prebaked the rolls when I was having a lot of people, frozen them and put them in the oven to reheat and finish browning. I usually do this a week or two ahead. I think they are just as good and nobody complains because they are getting homemade rolls or bread.
