Thank you for your comments. Did you happen to use melted butter (as suggested) for the topping? Perhaps using only a 1/2 cup would still allow it to be crumbly, but seems like the butter should be cold to mix into the other ingredients. I really LOVE the flavor and would appreciate more comments.
In my next post, I'm going to enclose a modified version of Julia Robert's recipe that seems a little more accurate. I will also include another Peach Cobbler recipe (also using scotch and Bisquick). Haven't made it, but sounds real good!
