Hi,
I am not sure this is what you are looking for, but it is a fantastic recipe
for catfish. I am sure you could add extra cajun seasonings to it for a spicier
fillet. I find the cajun seasoning already mixed at the grocery store.

1 1/2 lbs catfish
1/3 cup flour
1 1/2 tsp salt
1/2 tsp fresh ground pepper
2 eggs slightly beaten
1-1 1/2 tsp cajun seasoning
1 cup cornmeal
oil for frying
lemon to taste

Rinse the fish and pat dry. Mix the flour, salt, pepper and cajun seasonings,
and spread on waxed paper.Put the eggs in a shallow bowl and the cornmeal on
another piece of waxpaper. Lightly dust each fillet with the seasoned flour
mixture, dip the fillet in the egg, then dip in the cornmeal.Heat the oil and
fry about1 1/2-2 minutes on each side.
