Sally- I cooked in a Waffle House for a while when I was younger. The secret to the Omelets is the milkshake machine they use to whip the 2 eggs. It makes them SOOO fluffy. Another tip is to slowly pour the egg into the hot butter oil (about 2 Tbs.) Let the bottom of the omelet firm up, then gently shake the pan to turn the omelet edges in, then flipping softly (keeps the air in the eggs, making the omelet fluffy). Good luck! |
