I am a first class grill operator for Waffle House Inc. The important elements to making the Waffle House Omelet are as follows:

1. Crack 2 eggs into a blender and whip FULL of air. Make sure it is real "frothy"

2. Place 2 oz. of vegetable shortning into an egg pan. Heat.

NOTE: IMPORTANT the grease temperature is vital.
Test it by dropping a few drops in to the oil and if it starts bubbling and cooking rapidly it is ready. Grease that is to hot will scorch the omelet and create a brown tint.

3. Add frothy eggs to the pan and immediatley begin to move pan side to side . Once the sides begin to cook STOP shaking.

4. Let the omelet set up. At the right temperature about 30 seconds is perfect.

5. Gentle flip it over.

NOTE: IMPORTANT. Be gentle flipping with to much force will make a mess. Basically just roll the omelet over. TRY flipping a piece of bread over in your egg pan for pratice before you start.

6. That's it fold your other ingredients in the omelet. It is easier to flit a plain omelet than a loaded one.
