Recently my family went for a holiday to Byron Bay. We went to the Byron Bay Cookie Factory to buy seconds but there were only firsts. Mum has fallen in love with the Ginger and Date Cookies and I would love the recipe or any of the other cookies they have. Here are the ingredients in order:

Dates, Ginger chunks, walnuts, wholemeal wheat flour, unsalted butter, natural sugar, rolled oats, eggs, vanilla, spices and salt.

If you can't get the recipe could you please advise me as to how I could get my hands on the nearest possible. Or a similar basic cookie recipe I could change?
