Salmon Ballotine:
Ingredients: 2 Fresh Salmon Fillets Parsley Chopped Dill Basil Chervil 4 Gelatine Leaves
Method: Bone and skin salmon sides. Chop all herbs and parsley & mix together. Place parsley and chopped herbs on base of clingfilm. Place the Salmon on top of the parsley & clingfilm, making sure the parsley is the same width as the Salmon Season with freshly ground pepper and salt, Add parsley on top of the Salmon. Place the gelatine on top of the Salmon making sure it is all covered, add more parsley & herbs to cover the gelatine. Place the other Salmon fillet ontop of the gelatine and sprinkle with the rest of the parsley & herbs).
Roll tightly in the clingfilm to make it look like a large Sausage. Roll it tight in a kitchen cloth and tie with sring at both ends.
Steam for 35 mins. allow to chill & serve it sliced when cold with a light salad.
