Sugar Cookies
2 cups less 2 tablespoons unsifted all-purpose flour 1 1/2 teaspoons baking powder pinch of salt 1/2 cup (1 stick) unsalted butter, softened 3/4 cup plus 1 tablespoon granulated sugar 1 large egg 1 1/4 teaspoons pure vanilla extract
Sift the flour, baking powder, and salt together and set aside. Cream the butter and sugar until fluffy. Add the egg, vanilla, and beat thoroughly. Gradually add the sifted dry ingredients, mixing until just incorporated.
Roll the dough between large pieces of wax paper to about 1/8 inch thickness. Slide it onto a cookie sheet and place in refrigerator for about 10 minutes till dough is firm and cool. Remove the wax paper and cut out as many cookies as possible and transfer them with a spatula on a cookie sheet. Bake at 375 degrees F for 8 to 10 minutes until the edges are lightly browned |
