Lower Fat Olive Garden Alfredo (and just as tasty)
3/4 to 1 cup Parmesan cheese, grated (In this case,"Green Can" works better than fresh.) 8 oz Low Fat Cream cheese, softened and/or cut into bits 1/2 cup margarine 1/2 cup skim milk 1/4 tsp. onion powder 1/4 tsp. garlic salt (or powder - if preferred).
8 oz Fettucine, or pasta of choice, cooked, drained
In large saucepan ( I use the microwave and a microwave proof container.) combine cream cheese, margarine, onion, garlic, and milk, stirring constantly until smooth. Stir in the parmesan until smooth. Toss pasta lightly with sauce, coating well, and serve. Leftover sauce will freeze well.
Serves 2 (For 4 servings increase amount of pasta and add about 1 c. more milk and 1/2 c. more parmesan. Season with garlic/onion powder as desired.)
