Pannekoekon

2 Tablespoons butter or margarine
4 eggs
2/3 cup flour
2/3 cup milk
1 tablespoon sugar
1/2 teaspoon salt

Heat oven to 400 degrees. Spoon butter in a 9 in. skillet , you can use cast iron, teflon, stainless steel , it doesn't matter. Place in oven.

Meanwhile pour all ingredients into a blender and blend until smooth not very long or use a mixer. Pour batter into the prepared skillet. Bake 20-25 minutes until edges are between medium and deep brown and it is puffy. Don't peek the first 20 minutes.

After removing from oven I sprinkle with powdered sugar which I put in a fine strainer. To serve, cut up like pie. You may also use smaller pans and then you can serve each person their own round pannoekokeon. After the generous sprinkling of sugar I will serve with topping such as any pie filling (which I make myself), you can also buy it , then I put a scoop on top of the pie filling. I have served this for years to my family after the restaurant near us closed down and my family just loves it, I also serve it when we have visitors and they are awed and very impressed. My family still always asks me to make it. You may also serve it with just syrup too. If you would like the pie filling topping too, just let me know, it is easy
