I work at Joe's Crab Shack and copied a few recipes from their cookbook in the kitchen to share with you all. Here you go!

Joe's Crab ShackŪ Blue Crab Dip

Serves : 4
Prep. Time : 0:25

8 oz. cream cheese - softened
2 dashes dry mustard
2 splashes Tabasco sauce
3 Tbls. heavy whipping cream
1/2 tsp. Old Bay Seasoning
2 tsps. white wine
1 Tbls. grated Parmesan cheese
2 tsps. shrimp base
2 tsps. diced onion
2 tsps. diced red bell pepper
2 tsps. diced green bell pepper
2 tsps. diced Roma tomatoes
2 tsps. diced green onion
5 1/3 ozs. canned crab meat - drained
1 Tbls. grated Parmesan cheese - for garnish
tortilla chips

-Fold together all ingredients, except Parmesan for garnish and tortilla chips.
-Spread evenly into oven-proof baking dish.
-Microwave on medium power for 4 minutes.
-Transfer to oven and broil until top is slightly browned.
-Garnish with Parmesan and serve with tortilla chips for dipping.

NOTES : This is Joe's Crab Shack's most popular appetizers.

Joe's Crab ShackŪ Crab Cakes

Serves : 4-6
Prep. Time : 0:25

2 1/2 tsps. Worcestershire sauce
1 tsps. lemon juice
1 egg yolk
1 tsps. dry mustard
1 tsps. black pepper
1 dash crushed red pepper
1 dash Old Bay seasoning
1 dash salt
1/3 cup mayonnaise
1 1/4 cups fresh breadcrumbs
3 Tbls. chopped parsley
1 Lb. crab meat
1 Tbls. butter or margarine

-Combine first 9 ingredients.
-Fold in breadcrumbs and parsley.
-Fold in crab meat.
-Form into 4-6 patties.
-Melt butter in skillet.
-Fry crab cakes in butter for 4-5 minutes on each side.

Joe's Crab ShackŪ Etouffee

Serves : 6
Prep. Time : 0:25

1 tsps. chopped garlic
3/4 cup diced onion
1/4 cup diced celery
1/2 tsps. salt
1/2 tsps. cayenne pepper
1/2 tsps. paprika
1/4 tsps. dry mustard
1/2 tsps. Worcestershire sauce
12 oz. cream of mushroom soup, condensed
1/2 cup cream of celery soup, condensed
1 cup water
1/2 Lb. crawfish meat OR
1/2 Lb. cubed chicken breast OR
1/2 Lb. uncooked shrimp - peeled, tails removed
3 Tbls. sliced green onions
1 Tbls. chopped parsley
3 cups rice pilaf

-Sautee garlic, onion, celery, and green pepper in butter until soft.
-Stir in spices, soups, water, and meat of your choice.
-Bring to simmer and continue cooking until meat is cooked through.
-Stir in green onion and parsley.
-Scoop 1/2 cup rice pilaf into center of 6 bowls or soup plates. Pour etouffee over rice.

Joe's Crab ShackŪ Harvest Bay Mahi Mahi

Serves : 4
Prep. Time : 0:35

4 Mahi Mahi fillets
1/2 cup garlic butter
1/2 cup salad shrimp
1/2 cup sliced mushrooms
1 cup alfredo sauce
1/2 tsps. dill weed

-Grill Mahi Mahi until cooked through and browned.
-Sautee shrimp and mushrooms in garlic butter for 2-3 minutes.
-Stir in alfredo sauce and dill weed.
-Pour sauce over Mahi.

Joe's Crab ShackŪ Rice Pilaf

Serves : 6
Prep. Time : 0:30

1 2/3 cups water
1 Tbls. butter
1 bay leaf
1/4 tsps. white pepper
1 1/3 cups rice
1 tsps. butter
1/4 cup chopped celery
1/4 cup chopped onion
1/4 cup chopped red bell pepper
1/2 tsps. minced garlic

-Bring first 4 ingredients to a boil in a saucepan.
-Add rice, cover and cook until rice is tender and water is absorbed, about 20 minutes.
-Sautee celery, onion, peppers, and garlic in butter until tender.
-Stir sauteed vegetables into rice.
-Remove bay leaf before serving.

Joe's Crab ShackŪ Seafood Stuffing

Serves : 6
Prep. Time : 0:25

1/4 cup margerine
1/2 bunch celery - trimmed and diced
3 lrg. onions - diced
1 1/2 Tbls. minced garlic
1/2 Lb. pollock fillets
1/2 Lb. salad shrimp - chopped
1 oz. shrimp base
1/4 tsps. cayenne pepper
1/4 tsps. white pepper
2 cups croutons
1/4 cup seasoned bread crumbs
1/2 Lb. crab claw meat

-Sautee celery, onion, and garlic in margerine for until translucent.
-Add pollock and cook for 5-7 minutes.
-Add shrimp and cook for 2 minutes.
-Drain most (but not all) of liquid from pan.
-Stir in shrimp base and peppers.
-Fold in croutons and breadcrumbs.
-Fold in crab meat.

NOTES : Joe's Crab Shack uses this stuffing to make their Crab Balls (roll stuffing into 1" balls, roll in flour, and deep-fry until brown), their Crab Stuffed Shrimp (peel and devein uncooked shrimp, slice down middle the opposite site you deveined, lay shrimp cut side up in a small oven-proof dish, press 1 Tbls. stuffing into each shrimp cut, brush with melted butter, and bake in 375 degree oven for 15-20 minutes or until browned), and their Crab Stuffed Shrimp Embrochette (see recipe).

Joe's Crab ShackŪ Stuffed Shrimp Embrochette

Serves : 4
Prep. Time : 0:30

20 med. raw shrimp - peeled, deveined, tails removed
1 recipe seafood stuffing
20 jalapeno slices
2 slices Monterey jack cheese - cut in 1/2" pieces
20 slices uncooked bacon

-Slice down middle the opposite site you deveined.
-Lay shrimp cut side up and press 1 Tbls. seafood stuffing into each shrimp cut.
-Lay a slice of jalapeno and a piece of cheese over the stuffing.
-Wrap each stuffed shrimp in a slice of bacon.
-Thread 5 shrimp on a bamboo skewer; repeat 3 times.
-Grill shrimp over a medium flame for 5-7 minutes on both sides.
