Texas Tornado Cake
Cake: 2 teaspoons baking soda 1 1/2 cups sugar 2 cups California fruit cocktail 2 cups flour 2 eggs 1 cup pecans, chopped 1 stick margarine 1/2 cup evaporated milk 3/4 cup sugar 1 cup flaked coconut
Frosting: 1 stick margarine 1/2 cup evaporated milk 3/4 cup sugar 1 cup flaked coconut
Cake: Mix together first 5 ingredients. Pour into greased and floured 13x9x2 inch pan. Mix brown sugar and pecans and sprinkle on the batter. Bake at 325 for 40 minutes.
Frosting: Boil butter, sugar and milk for 2 minutes. Add coconut. Spoon icing over cake as cake is removed from oven.
