Lynda, I found this recipe, but it does not have a graham cracker crust topping. This is all I found in my search. If this sounds like the cheesecake you are looking for, perhaps you can use the provided crust recipe and use it as a crumbly topping.
Luby`s Baked Cheesecake
Makes One 9-inch cheesecake
Crust:
1 1/2 cups graham cracker crumbs 1/4 cup granulated sugar 1/4 cup (1/2 stick) butter or margarine, melted
Filling:
1 1/4 lbs. (2 1/2 8-oz. packages) cream cheese, softened 1 cup granulated sugar 3 extra-large eggs 1 cup sour cream 2 Tbsp. all-purpose flour 1/2 tsp. vanilla 1/2 tsp. fresh lemon juice Fresh fruit (optional)
1. Heat oven to 350 degrees.
2. For crust, in small bowl, combine crumbs, sugar and margarine. Mix well. Press onto bottom and 1 inch up sides of 9-inch springform pan.
3. Bake 10 minutes or until golden brown. Cool completely
4. For filling, in large bowl, beat together cream cheese and sugar until creamy. Add eggs, one at a time, mixing well after each addition. Add sour cream, flour, vanilla, and lemon juice. Mix just until well blended. Do not overmix. Pour into crust.
5. Bake 30 to 35 minutes or until almost set. Cool completely on wire cooling rack. Refrigerate at least 2 hours. Garnish with fruit, if desired.
