ORANGE NUT BREAD
Source: Renaissance Cottage Bed & Breakfast

1/3 cup margarine
1 cup sugar
2 eggs
1 teaspoon vanilla
1/4 teaspoon almond flavoring
1 1/2 cup sifted flour
3 tablespoons fresh orange juice
1 teaspoon baking powder
1 teaspoon salt
1/2 cup milk
1/2 cup chopped nuts
1 teaspoon grated orange rind
1/4 cup sugar

Cream together the margarine and sugar. Beat in the eggs, one at a time, then add flavorings. Sift together the flour, baking powder and salt, and add alternately with the milk. Stir as little as possible to get this well blended. Fold in the nuts and orange rind. Pour batter into a bread pan and bake in a 350 degree oven for approximately one hour, or until toothpick placed in center comes out clean. Mix the 1/4 cup sugar and orange juice and dribble this over the hot loaf as soon as it comes from the oven. Cool for 10 minutes in the pan, then remove loaf and finish cooling it on a rack. Bread of this kind always slices easier if you do not cut it until the next day.
