LILLIAN’S BRAN MUFFINS
Soften 2 cups bran in 1 cup plus 2 1/2 tbsp HOT water Add: 1/3 cup molasses 1/3 cup honey 1/4 cup oil 1/2 tsp vanilla 1/3 cup whole wheat flour 2/3 cup flour 1/3 cup quick oats 1 tsp cinnamon 1/6 tsp nutmeg 1 tsp baking soda 1/2 tsp salt 2 tbsp poppy seeds 2 eggs some currants/raisins
Mix wet ingredients. Mix dry ingredients. Mix all together. Fill muffin cups 1/2 full, remove when cool. Bake at 350 degree for 15-20 minutes.
I’ve never been to a Starbuck’s, but these are good and satisfying. I usually substitute cornmeal for half of the flour.
