My husband loves Pollo Fundido. We get it quite often at a local Mexican restaurant. It is chopped chicken in a fried (or maybe baked) tortilla with a white cheese sauce and topped with sour cream. His birthday is coming up and I would love to have a recipe for it!!
BTW, the chicken is not too spicy. There are no tomatoes or peppers in it.
