I am looking for a recipe from a restaurant that operated in the Dallas, Texas area around 1985 to 1990 (estim.). The restaurant was called THE HOLY COW. It specialized in decadent cakes. The one that I am looking for was their CARROT CAKE. I have been unable to locate the owner's of the company. The closest that I have ever come to seeing a cake like it is (remember that I am going off of memory here) ALBERTSON'S SUNRISE MUFFINS. The carrot cake, like the muffin, is a rich dark color that is very moist. I have not tasted a carrot cake that could rival it yet. If any one can get me a copy of THE HOLY COW's CARROT CAKE, I would be most appreciative. If not, a copy of the recipe for ALBERTSON'S SUNRISE MUFFINS would be appreciated as well. Thank you.
