This is not a copy cat version, but one inspired by the Applebee's recipe:
Caramel Apple-Cheese Pie
Crust: 1 1/4 cups graham cracker crumbs 1/2 stick (4 TBSP) unsalted butter, melted 2 TBSP. sugar 1/2 tsp. cinnamon
Mix all the ingredients together and press into the bottom of a 9-inch springform pan or into a 9-inch pie plate. Chill until ready to fill.
Layer into crust:
Apple Layer: 4 large granny smith or other tart apples; peeled, cored, and thinly sliced 1/2 cup brown sugar, packed 1/2 tsp. cinnamon 1/4 tsp. nutmeg 1/2 cup coarsely chopped walnuts
Lay the apple slices in the bottom of the graham cracker crust.
Mix together the brown sugar, cinnamon, and nutmeg. Sprinkle over the sliced apples. Top with the chopped walnuts. On top of the apples put:
Cheese Layer: 1 (8-oz.) pkg. cream cheese or Neufchatel cheese 1/3 cup sugar 1/4 tsp. cinnamon 1 cup extra sharp cheddar cheese, grated 2 eggs
Put all the ingredients in a food processor. Process until smooth. Pour over apple layer.
Bake the pie at 350 degrees, about 35-40 minutes, until the cheese layer is soft-set and golden. Let cool about 1/2 hour. (This dessert is good served warm!)
Pour 1 cup caramel sauce for ice cream sundaes over the pie. Serve the pie cut in wedges and topped with a scoop of vanilla.
